Wine and Cheese Pairings
Field 3: Aged Gouda has a firm, creamy body with nutty flavors. Pairing it with the fruit-forward richness and light tannins of Field 3 allows each component to shine.
Latitude 43: Baby Swiss. The baby swiss is made with rich whole milk making that butterfat become part of the cheese – it’s a perfect decadent and nutty pairing for the balanced rich fruit flavors of this Chardonnay.
Vin 10: Dill Havarti. This rich, creamy cheese pairs seamlessly with citrus overtones – think grapefruit and grassy lemon – that are so prevalent in Vin 10.
Blonde Rocks: Havarti’s smooth, buttery and slightly tangy flavors melt into the tropical fruit notes of this unoaked Chardonnay for a pure and graceful finish.
Pure Bred Red: Aged Cheddar provides a sharp and slightly salty contrast to the deep and lively fruit character of this off-dry estate-grown red. The easy softness of the Marechal Foch grape stands up amazingly well to the cheddar’s richness coming together in a sultry and luscious release of flavor.
Cupola: Creama Kasa. Buttery and piquant, the triple-cream cheese is a little like Brie. It’s perfect for spreading on warm crusty bread or melting for fruit fondue. Cupola’s delicate sweetness is just the right balance for all that creamy goodness.
Riesling: Romano is a hard cheese; salty and full of texture, with a buttery, slightly nutty flavor that pairs well with our Riesling. This wine’s bright fruit character is bold enough to dance with, but not overpower Romano.
Badger Blush: Apple Smoked Cheddar. A lightly smoky flavor that balances well against the strong overtones of cranberry and cherry in Badger Blush.
Big Stuff Red: Blue Cheese is a rich and deeply flavorful cheese; salty, pungent and spicy. Robust fruit character and a hint of sweetness in Big Stuff Red are a splendid match for the depth of flavor in this fabulous wine.
Driftless: Gruyere at first fruity then pleasantly nutty, is a lovely companion to Driftless. This pairing weaves through the wine’s earthy nuttiness to enhance its bold fruit character in a delicious dance of flavors.
Finis: Cocoa Cardona is made from 100% goat’s milk. It is aged and rubbed with cocoa, which enhances the goat-milk richness. The clean acidic and fruity flavors of Finis break through the richness of the Cocoa Cardona unveiling its layer-by-layer depth and preparing the palate for another luscious bite.
